Also known as a bain marie, double boilers are commonly used in baking for the gentle heating and melting of chocolate or other baking ingredients.
There are so many uses for a double boiler, including heating up egg whites such as you would for Swiss meringue buttercream. You may purchase a double boiler in store, or simply make one at home using materials you already have:
A double boiler consists of two components:
- A saucepan on the bottom full of heated or boiling water
- A saucepan on top that contains the ingredient you wish to melt. The steam from the boiling water gently heats the saucepan on top.
