Also known as a bain marie, double boilers are commonly used in baking for the gentle heating and melting of chocolate or other baking ingredients.

There are so many uses for a double boiler, including heating up egg whites such as you would for Swiss meringue buttercream. You may purchase a double boiler in store, or simply make one at home using materials you already have:

A double boiler consists of two components:

  1. A saucepan on the bottom full of heated or boiling water
  2. A saucepan on top that contains the ingredient you wish to melt. The steam from the boiling water gently heats the saucepan on top.

If you do not have two saucepans, you may use heat-safe bowl such as your metal, ceramic or glass.
