Chocolate Chip Muffins
(softened, room temperature)
Preheat oven to 350 degrees Fahrenheit. Line your muffin tray with cupcake liners.
Beat together butter and sugar until fluffy. Add one egg to butter mixture at a time. Add milk, then beat until well combined.
In a separate bowl, combine flour and baking powder.
Add flour mixture into butter mixture, in two additions. Be sure to mix between additions.
Add chocolate chips, using a spatula to fold chocolate chips into batter.
Divide batter into paper-lined muffin tray, filling each 3/4 way full. Bake for 22 minutes or until cake tester comes out clean.
